Known for its rich coastal resources and fishing traditions, the municipality of Cordova is home to one of Cebu’s most distinctive seafood delicacies: Bakasi, a saltwater eel commonly found in the town’s coastal waters and mudflats, specifically in Brgy. Buagsong.
For generations, Bakasi has been part of the local fishing industry and has provided livelihood opportunities for the fisherfolk. It has contributed to the town’s culinary identity.
Bakasi is caught using “bantak,” a type of contraption placed along the eel’s natural pathway.
Bakasi is most commonly prepared as linarang, a soup-based dish cooked with a blend of spices and local ingredients. The dish has become a popular attraction among visitors seeking to experience exotic and authentic Cebuano cuisine.
As interest in local food tourism grows, Bakasi remains one of the town’s most recognized offerings. It gives visitors a taste of tradition shaped by the sea.
